Carrot Cake

Cake Recipe = Carrot Cake - Serves: 8

Ingredients:
175g whole meal self-raising flour
1 level tsp baking powder
1 level tsp mixed spice
Pinch of salt
150ml sunflower oil
175g soft light brown sugar
3 eggs
50g Raisins, chopped
50g Walnuts, chopped
250g grated carrot

Icing:
200g cream cheese
Few drops vanilla extract
3-4 level tbsp icing sugar

Method:
Preheat oven at 180°C.
Mix flour, baking powder, spice and salt together in a large bowl. Then add in all the other cake ingredients and mix well. Pour the cake mixture into a 1kg greased loaf tin, or a 20cm round greased cake tin. Bake in centre of oven for approximately 1 hour, until firm to the touch in the centre and a skewer inserted into the middle of the cake comes out cleanly. Allow to cool in the tin for 10 minutes, then turn out on to a wire rack and leave to cool completely. For the icing, beat together the cream cheese and vanilla, the slowly work in the icing sugar. Spread the icing over the top of the cake.
