Cake Recipe = Orange and Almond Cake

2 whole, unpeeled oranges
250ml water
250g blanched almonds
200g castor sugar
30ml corn flour
5ml baking powder
2.5ml salt
6 large eggs
5ml vanilla essence
Icing sugar

Boil the whole oranges slowly for 1.5 hours in the water. This can be done a day in advance. Preheat the oven to 200 °C. Grease a deep baking tin 20 cm in diameter with butter. Place the almonds, castor sugar, corn flour, baking powder and salt in a food processor and chop the almonds until they resemble coarsely ground breadcrumbs.
Quarter the cooled, cooked oranges removing only pips, and add it to the almond mixture; now add the eggs, one at a time and the vanilla essence. Blend in a food processor then spoon the mixture into the tin and bake for 1 hour until golden brown and firm. Sift the icing sugar over just before serving. Serve with whipped cream.
