Curry Recipes - King Prawn Byriani

2 Cups Basmati Rice
1lb Raw King prawns with shell on
4 cloves garlic crushed
2 Tsp Ginger Puree
4 green chili’s, chopped
Handful almonds
1 large onion, chopped
½ tsp Turmeric
1 cup fresh coriander
1 tbsp Garam Masala
1 tsp Cardamom seeds
Juice of 1 lime

Basmati rice must be used for this recipe. Salt the water in a large pan, bring to the boil and add the basmati rice and cardamom seeds. Cook for 7 minutes then drain.

Meanwhile fry the onion until translucent then add the ginger, garlic, chilies, garam masalla and stir fry for a further 2 minutes mixing well. Now add in the rice, lime juice and stir well. Lay the contents out into a baking dish, first a layer of rice then lay on the king prawns then another layer of rice and bake covered in a hot oven for 20 minutes. Serve with the crushed nuts and coriander leaves sprinkled over.
