Curry Recipes - Thai Red Beef Curry

2lb Fillet beef steak
4 Cloves garlic - Crushed
2 tbsp Thai Red Curry Paste
1 tbsp Shrimp paste
2 tbsp Fish Sauce
Small piece Root Ginger - grated
1 Onion copped
12 Whole chillies - stalks removed 12 Basil Leaves
1 stalk Lemon Grass
1 Lime, juice
400ml Coconut Milk
5 tbsp Groundnut oil

Stir fry the onion in the oil on a medium heat until soft, add the garlic, ginger, shrimp and curry pastes and fry for 2 minutes on medium heat. Add the beef and seal well on all sides. Add the coconut milk, whole chilies, whole basil leaves, lemon grass stalk and fish sauce. Simmer for 20 minutes or until the meat is cooked; add the lime juice and serve.
