Pudding Recipe = Creme Caramel Recipe - Serves 6

175g sugar (normal)
60ml cold water
6 egg yolks
15ml caster sugar
750ml single cream
5ml vanilla essence

Put the normal sugar in a pan with the water. Heat gently, stirring, until the syrup is clear and all the sugar has dissolved. Bring to the boil and boil without stirring until the mixture is a rich caramel color and then divide the mixture between six ramekins. Beat the egg yolks with the caster sugar in a bowl over a pan of hot water until thick and pale, this will almost triple in volume. Whisk in the cream and vanilla essence. Cook gently, stirring, until the custard thickens. Strain the custard mixture over the caramel; allow cooling, then chilling until set.
