Pudding Recipe = Rhubarb Steamed Pudding - Serves 8

Ingredients:
100g soft margarine
100g light brown sugar
2 eggs, beaten
50g self-raising flour
50g whole meal self-raising flour
2.5ml baking powder
50g fresh breadcrumbs
175g rhubarb, finely chopped
Butter, for greasing

Method:
Cream together the margarine and sugar until light and fluffy, and then beat in the eggs, one at a time. Fold in the 2 types of flour, baking powder and breadcrumbs, then gently mix in the rhubarb. Turn into a greased 1 liter pudding basin. Cover with a double thickness of greased greaseproof paper or foil, twisting and folding under the rim to secure. Steam for 1 hour, then turn out on to a warmed serving plate. Serve with hot custard.
