Curry Recipes - King Prawn Byriani

Ingredients:
2 Cups Basmati Rice
1lb Raw King prawns with shell on
4 cloves garlic crushed
2 Tsp Ginger Puree
4 green chili’s, chopped
Handful almonds
1 large onion, chopped
½ tsp Turmeric
1 cup fresh coriander
1 tbsp Garam Masala
1 tsp Cardamom seeds
Juice of 1 lime

Method:
Basmati rice must be used for this recipe. Salt the water in a large pan, bring to the boil and add the basmati rice and cardamom seeds. Cook for 7 minutes then drain.

Meanwhile fry the onion until translucent then add the ginger, garlic, chilies, garam masalla and stir fry for a further 2 minutes mixing well. Now add in the rice, lime juice and stir well. Lay the contents out into a baking dish, first a layer of rice then lay on the king prawns then another layer of rice and bake covered in a hot oven for 20 minutes. Serve with the crushed nuts and coriander leaves sprinkled over.

Curry Recipes - Thai Red Beef Curry

Ingredients:
2lb Fillet beef steak
4 Cloves garlic - Crushed
2 tbsp Thai Red Curry Paste
1 tbsp Shrimp paste
2 tbsp Fish Sauce
Small piece Root Ginger - grated
1 Onion copped
12 Whole chillies - stalks removed 12 Basil Leaves
1 stalk Lemon Grass
1 Lime, juice
400ml Coconut Milk
5 tbsp Groundnut oil

Method:
Stir fry the onion in the oil on a medium heat until soft, add the garlic, ginger, shrimp and curry pastes and fry for 2 minutes on medium heat. Add the beef and seal well on all sides. Add the coconut milk, whole chilies, whole basil leaves, lemon grass stalk and fish sauce. Simmer for 20 minutes or until the meat is cooked; add the lime juice and serve.

Curry Recipes - Banana Curry Chicken

Ingredients:
4 chicken breasts
2 tbsp flour 1 tsp salt
4 tsp curry powder
Oil for frying
2 bananas
1 cup rice
2-3 limes

Method:
Mix the flour, salt and curry powder and coat the chicken with it. Fry the chicken in the oil until golden brown and then reduce the heat, cover and cook for further 15 minutes until tender. Slice bananas and add them to cook for 5 minutes. Meanwhile cook the rice in boiling salted water for about 20 min until tender, adding 1/2 a lime. To serve spread the rice on a serving dish, add the chicken and banana pieces and garnish with slices of lime.

Curry Recipes - Lamb Stew Cape Malay

Ingredients:
300g White Beans
400g Lamb Meat, diced
2 Onions, chopped
3 Tomatoes, chopped
4 Tbsp Oil
Butter
1 tsp Chili Powder
1 tsp Curry Powder
2 tsp Sugar
1 tbsp Vinegar
Handful Raisins
Salt
1 apple

Method:
Soak beans overnight, pour away the water and boil for one hour, drain and set aside. Heat oil in a large pan, add chopped onions and cook until soft, add in the diced lamb, brown on all sides then add the chopped tomatoes, salt and chili powder. Cover and let simmer for about 1/2 hour.

Mix curry powder, sugar, water and some vinegar to form a paste and stir into the meat; add in the beans together with diced apple and raisins. Cover and cook on low heat for at least 2 hours until the meat is tender, adding water if required to thin. Serve with boiled potatoes or rice.
