Highland Pasta with Smoked Salmon
Salmon in foil with Basil and White wine
Salmon with Lemon and Basil Mash, Broccoli and Roasted Tomatoes
Salmon Recipe = Highland Pasta with Smoked Salmon - serves 2
Ingredients:
4 oz (110g) pasta
8 oz (225g) smoked salmon
1 oz (25g) butter
1 medium onion, finely chopped
1 clove garlic, crushed with 1 teaspoon salt
4 oz (110g) mushrooms, thinly sliced
1 level teaspoon mild curry powder
1 level tablespoon plain flour
5 fl oz (150ml) white wine
2 tablespoons crème fraîche
Method:
Melt the butter in a solid-based frying pan, and then add the onion and sauté over a low heat until soft. Add the crushed garlic and mushrooms and continue to cook for 2-3 minutes. Next mix the curry powder and flour together and stir these into the butter. Then add the wine gradually, stirring briskly after each addition and, when all the wine is added, cook for a further 3 minutes before finally adding the crème fraîche. The sauce is now ready, lay a piece of cling film over the surface if you're not using it immediately as this will stop a skin from forming.
When you're ready to cook the pasta place a large saucepan with plenty of lightly salted water on to boil and cook the pasta for 10 minutes or until it is cooked.
Tear little pieces of your smoked salmon into strips, then reheat the sauce and add the salmon at the last minute before serving.
Now drain the pasta, return it to the pan, then quickly stir in the sauce and smoked salmon and serve at once with a side salad or crusty bread.

Ingredients:
40g butter, melted
20g pack of fresh basil, torn
200ml white wine
Zest and Juice of a lemon
Salt
Freshly ground black pepper
1 lemon, cut into wedges for garnish
Method:
Preheat the oven to 200°C.
Cut a piece of foil about 1 ½ times the length of the salmon, and grease with butter.
Lay the salmon on the centre of the foil and transfer to an oven tray. Bring the edges of the foil up around the fish, scrunching up the two ends tightly, making an envelope.
Stir the remaining ingredients into the melted butter and pour over the salmon. Season generously. Bring the sides of the foil up over the fish and fold the edges together to make an airtight parcel. Cook for 20 minutes.
Serve on a platter garnished with lemon wedges. Delicious served with new potatoes and broccoli.

Ingredients:
2x 200g fillets of Salmon
400g diced potatoes, boiled
1 head broccoli
1 fresh lemon
60g butter
1 handful fresh basil leaves
olive oil
Salt
Freshly ground black pepper
Method:
Preheat oven to 180oC.
Season the fish and brush very lightly with olive oil. Grill to your liking and set aside.
Meanwhile blanche the broccoli, refresh in cold water and set aside.
Brush the tomatoes with olive oil and season. Bake inoven for 20-30 minutes until just soft and the skins have split slightly.
Mash the potatoes with the butter. Season to taste and add the juice of half a lemon and the torn basil leaves. Serve the cooked fish on the mash. Toss the broccoli in the juices and oils of the tomatoes and serve with the fish.
