Creamed Chicken and Potato recipe
Chicken and barley stew

Cheesy Tomato Pasta
Avocado and banana yoghurt
Ingredients:
½ ripe banana
½ small avocado
4 tbsp natural yoghurt
Method:
Mash the banana and avocado together, either with a fork or in a blender, then stir in the yoghurt thoroughly.
Chicken with red pepper and sweet potato
Ingredients:
100ml water
1 small chicken breast
½ medium sweet potato, peeled and cubed
½ red pepper, deseeded and sliced
Method:
Boil water and add chicken and vegetables. Cover and simmer for at least 15 minutes or until chicken and vegetables are cooked. Puree the mixture until smooth. Thin with a little cold water if required.
Cheesy Tomato Pasta
Ingredients:
1 tsp margarine
50g cheddar or mild cheese, finely grated
1 large tomato, skinned, seeded & chopped
1 tablespoon cottage cheese
50g Small Pasta Shapes
Method:
Cook the pasta shapes until soft following the directions on pack. Melt the margarine in a saucepan, add tomato and cook over a low heat for 2 minutes. Remove pan from heat and add in the cheeses; allow the cheeses to melt into a sauce. Pour the sauce over cooked pasta and serve.
Chicken and barley stew
Ingredients:
1 cup Water
1 chicken breast, cubed
¼ cup prepared barley (soaked overnight in water)
1 carrot, peeled and chopped
1 potato, peeled and chopped
½ cup yellow squash or summer squash peeled and chopped
Method:
Bring chicken, barley and water to a boil and simmer until the chicken is cooked. Add the vegetables and cover, reduce heat and simmer for about 15 minutes. Strain off the water and mash or puree, depending on desired consistency. Cool and serve.
Creamed Chicken and Potato recipe
Ingredients:
2 tsp margarine
1 tsp flour
1/4 cup milk
1/4 cup chicken, cooked and diced
1/4 potato, cooked and cubed
1 tablespoon grated cheese
Method:
Melt margarine in small pan over low heat. Stir in flour, and blend well. Add milk, and stir until smooth, as you would do to make a white sauce. Cook over low heat until mixture begins to thicken, then add chicken and potatoes. Stir for about 2 to 3 minutes more or until heated through. Add cheese, and stir until smooth.
