Cake Recipe = Pear Cake with Raisins - serves 8
Ingredients:
Caramelised fruit
100g butter
4 large ripe pears, peeled and cored
60ml honey
Pinch of salt
85g seedless raisins
Cake Mixture
250g butter
250g icing sugar
4 extra large eggs
2.5ml salt
15ml baking powder
270g cake flour
60ml brandy or fresh orange juice
Method:
Cut the pears into 1 cm cubes. Melt the butter in a large, heavy based frying pan over high heat and sauté the diced pears in the butter until nicely browned. Add the honey, salt and raisins and cook until a brown caramel sauce forms. Allow to cool.
Preheat the oven to 180 °C. Grease a 22cm diameter round, loose bottomed tin and line the base well with greased baking or butter paper.
Beat the butter and the icing sugar until light and creamy. Add the eggs, one at a time — first the white and then the yolk of each egg. Beat well after each addition.
Sift the dry ingredients twice. Fold the dry mixture into the creamed mixture alternately with the brandy or orange juice. Fold in the cooled pears until just mixed. Spoon the mixture into the prepared pan. Bake for about 50 minutes. Allow to cool.
