Pan-fried seabass with lemon and tarragon mayonnaise
Whole roasted mackarel with mint, spring onion and cherry tomatoes
Fish Recipe = Pan-fried seabass with lemon and tarragon mayonnaise -
serves 4
Ingredients:
150ml mayonnaise
½ x 25g pack fresh tarragon, roughly chopped
Zest and juice of 1 lemon
4 seabass fillets
2 tsp olive oil
Method:
Mix the mayonnaise with the tarragon, half the lemon zest and juice, and set aside.
Season the fillets and sprinkle with remaining lemon zest.
Heat the oil in a pan and cook the fillets on a high heat skin-side down for 2-3 minutes, until golden. Turn and cook for another 2 minutes, until opaque. Squeeze over the remaining lemon juice and serve with the mayonnaise, lemon wedges and watercress.

Ingredients:
4 whole mackerel, bones removed
4 tbsp olive oil, plus extra for oiling
1 garlic clove, finely crushed
½ x 25g pack fresh mint, finely chopped
1 bunch of spring onions, finely chopped
300g pack y tomatoes
Method
Preheat the oven to 180ºC/fan160ºC/gas 4.
Place the mackerel on an oiled baking tray. Mix the oil and garlic with the mint and spring onion. Season and spread in to the cavity of each fish.
Top with tomatoes and bake for 18-20 minutes until opaque. Serve with wilted spinach, sautéed potatoes and courgettes.
