Pudding Recipe = Fresh Berries with Meringue Cream - Serves 4 - 6

250ml plain yoghurt
4 large meringues or meringue nests
250—375ml fresh berries (raspberries, strawberries or blackcurrants)
3 granadillas
250ml fresh cream
Grated rind of half a lemon

Line a sieve with a layer of white absorbent paper towel and place it over a dish. Pour the yoghurt into the sieve and set it aside for at least half an hour to allow the excess moisture to drip through. Break the meringues info approximately 1 cm pieces by placing them in a plastic bag and flattening them with the bottom of a saucepan or a rolling pin. Pick over the berries and rinse them, if necessary. Halve the granadillas and scoop out the pulp.
Beat the cream until stiff. Mix the whipped cream with the yoghurt, half the granadilla pulp and all the lemon rind. Just before serving, lightly mix the meringues and berries (reserving a few of the best for decoration) with the cream and spoon info pudding bowls. Pour over the remaining granadilla pulp and decorate with the reserved berries
