Chicken Recipe = Really Easy Corn and Chicken Patties - Makes 10 patties
Ingredients:
1 can of whole kernal sweet corn
2 chicken breasts, boned, skinned and diced
1/2 cup flour
1/2 fresh chilli, finely chopped
1/2 red pepper, finely chopped
Handful fresh coriander leaves
Sesame seeds
1 clove Garlic
Juice of half a lemon
2 tblsp soya sauce
Salt to taste
sesame seeds to garnish
Method:
Place all ingredients is a food processor and chop roughly. Shape the mixture into about 10 patties. Heat a frying pan with a little oil and fry patties until they are golden brown. Sprinkle with sesame seeds and enjoy!
